Sour Creme Blueberry Muffins

1/4 Cup butter - room temperature
3/4 Cup sugar
2 eggs
1 1/4 Cup plus 2 Tablespoons sifted flour
1/2 tsp baking soda
1/4 tsp salt
3/4 Cup sour cream
1 Cup blueberries
1/2 tsp vanilla
Preheat oven to 450 degrees and line muffin tin with paper liners. In a medium bowl, cream butter, sugar, and vanilla. Add eggs one at a time, beating well after each. Sift flour, soda, and salt together, and add to butter mixture alternately with sour cream. Gently fold in berries. Bake for 12 - 15 minutes until golden brown.
Makes 12 muffins. (Recipe can be doubled, if desired.) |
